Come in he said, have some green smoothie he said. I tried to decline politely, but he wouldn’t have it. I didn’t want to drink it. He insisted. I brought glass to mouth and took a reluctant sip. The delight. It was delicious. Who knew something that looked so terrible could taste superb. Utterly hooked.
Recipe credit: my mate Tom (I altered it slightly)
Difficulty: Super easy
Prep time: 15 minutes
1 large ripe banana
1 large handful spinach
2 cups roughly chopped kale
1 tablespoon pepitas
1 tablespoon sunflower seeds
1 teaspoon stevia
200ml soy milk or lactose free milk
100-150 ml water
1/2 vanilla bean pod (inner seeds only)
First up wash your greens (kale and spinach). Next slice your banana and the kale into small pieces and blend together with all the other ingredients for 2-3 minutes until it is smooth and liquified.
Hint: To remove the seeds from the vanilla pod, slice the bean open at the side and then run the blunt edge of your knife along the inside of the pod collecting the seeds.
